How to prepare Gord's Great Canadian Back Bacon

Stove Top Sliced
  • Over medium heat, cook slices with a small amount of oil (canola or a good grade of olive oil) for about 2 or 3 minutes per side.
  • It can also be broiled, baked or, Gord's way, grilled.
Roasts Unsliced
 
This can be done any number of ways, which demonstrates the versatility of this great product.
  • Put the roast in a small dish for baking and add about ½" of water to the dish. Tightly cover with aluminum foil and bake in a 350º oven until the internal temperature reaches 150º.
  • For a variation, Gord inserts several whole cloves into the roast and adds about ½" of beer to the dish. Cover with aluminum foil and bake in a 350º oven until the internal temperature of the roast reaches 150º.
  • Try cooking it on the grill as you would any roast - outstanding!
  • Barbeque sauces are not recommended for peameal on the grill because it will unquestionably mask the distinct flavor of this product.
  • Serve with your favorite hot mustard if you like and enjoy.
