Just what exactly is Peameal Bacon?
Peameal bacon started as an Ontario specific specialty product back in the day when Gord was little and dreamed of being an NHL hockey star for the Toronto Maple Leafs. Peameal bacon is made from the center-cut or rib end of the loin. It is cured in brine and then rolled in cornmeal. Originally it was rolled in dried yellow peas that were ground into meal and packed around the meat to preserve it. When cornmeal became more plentiful and practical, processors switched over. The name peameal stuck and is in fact a registered trade mark name in Canada.
